About 1% of Americans suffer from celiac disease, in which gluten causes problems in the small intestine, but others — about 10 times as many others — also maintain a gluten-free diet, claimimg numerous health benefits such as heightened energy levels.

On one hand, companies and gluten-free dieters alike are profiting from a myriad of increasingly delicious and varied gluten-free products.
